Our first and main product is cacao, where all production is certified organic. We pay special attention to processing quality (fermantation and drying) achieving constantly improving levels (exportation to Europe and USA since 2000). The cooperative invests in the negotiation of adequate prices, which allow for maintenance and sustainability. Price levels for CABRUCA cacau are up to 100% above local market price, strengthening the organic agriculture movement in Bahia considerably. On demand, we produce liquor, powder, butter, nibs and chocolate of our cacao together with a Brazilian partner industry. At the moment, annual production of organic cacao is at app. 200 tons per year. The main production periods are between april and june (40%) and between september and december (60%).

Recently we have reactivated our production of preserved heart of Palm (palmito)  with two different species: Açaí and Pupunha. We make app. 1500 units (300 grams dreinded weight, 520 grams total weight) per month, 50% of each species. The cooperative’s production capacity is of app. 3000 units per month for açaí, and 1000 units for pupunha. In the near future pupunha production will equal that of açai. The conserved heart of palm is produced by a certified organic regional partner factory, using mineral water instead of tub. The trademark CABRUCA® was registered for our products.

Throughout the year, however in small quantities, we produce a mix of dried fruits (banana, papaya and coconut) in 70 and 100 grams packages, also with the trademark CABRUCA®. Production is still limited, and only carried out on demand. We can, however, make app. 100 packages per day year round. A new mix with local traditional fruits Jaca (Jack fruit), Cupuaçu (native to the Amazon), Jenipapo (Atlantic Rainforest native) and Plantain Banana (cooking banana) is in development.
 
CABRUCA also supports two associates in their effort to built and certify processing units for fruits. We expect the certification of processing for fruit pulp of açaí, cacao, cajá (native fruit), cupuaçu and others for 2008. The main product will be frozen fruit pulp for juices and smoothies, and also jams and traditional baian sweets.

Other products are sold only on the local markets, because quantities are still limited. CABRUCA associates have formed an initiative for an organic market in the town of Ilhéus, and several cooperates sell their fresh products (fruit, herbs, vegetables etc.) directly to regional supermarkets.
